Method
Roughly chop the mushrooms
Put a small frying pan on a medium-high heat and throw in the butter. Once the butter has melted smash the garlic clove and put into the pan with the mushrooms. Saute for about 5 minutes or until golden brown, stir to allow the garlic to infuse the mushrooms. Turn the heat of the pan down to low and remove the smashed clove.
Beat the eggs with some salt and pepper in a bowl or a cup and then tip into the pan. Allow the egg to cover the base.
When the omelette is half cooked and still raw on the top, add the cheese and allow to fully cook through.
Tip out onto a plate and add the baby spinach leaves on top.
